I'm a planner and organizer by nature, sometimes to a fault, but other times this trait really comes in handy. Such as when you go from having a planned home-birth to an unexpected C-section and wind up in the hospital for 3 days. Yup, this happened to me, and boy was I happy to have made these super healthy and balanced protein bars just days before in preparation for our little guy's arrival. Hospital food leaves so much to be desired, so I was thrilled to have these as my go-to snacks during our stay.
