With summer days quickly dwindling and work about to begin in full tilt (sniff, sniff!), our days & schedules are quickly getting filled, which means time management must be a PRIORITY. But let me be clear: this means that we must make time for our priorities, the things which are most important to us. Healthy, home-cooked meals are a big priority to us, BUT sometimes we just don't have uber amounts of time to prepare a lengthy or complicated meal. That's where sheet pan meals come to the rescue!
In our household chicken is a staple item we eat to get quality protein and a full & happy belly. But as much as I love our tried & tested go-to recipes, it definitely gets boring when you do the same-old same-old. Especially if you're trying to lose body fat or stay lean, the recipes often call for a pretty plain bird. SO, since I'm not one to shy away from jazzing things up, that's exactly what I did this week with this classic recipe.
Our little guy Aiden is now 18-months old and he's really starting to talk up a storm. It's my favorite moment thus far of being a parent - seeing him develop language and being able to communicate with him (and not just guess what he's trying to tell me lol) is really amazing. Among his favorite words is COOKIE - and every day, he's got cookies on his mind. He literally asks for a cookie Every. Single. Day.
And while there are a few good organic, low-sugar brands of cookies, making something from scratch and knowing I can control the ingredients is something I try to do regularly for him. Plus, the hubs and I enjoy a cookie or two occasionally ;)
