Thanksgiving is one of my favorite times of the year. The autumn weather has started to roll in, I'm finally able to bust out my wooly sweaters and boots, and the foods in season are simply delicious. With this being our final Thanksgiving here in the Netherlands, I wanted to cook up a delicious feast for my family to celebrate our incredible four years here. And of course, I wanted to share these delicious recipes with you & yours too!
There was soooo much anticipation for our trip to Dublin. Ty & I have been going full steam ahead since Christmas (craziness right?!) and this was going to be our last trip while living here in Europe. AND it was our first extended trip away from Aiden. EVER. So my nerves were on fire from excitement, anxiety & anticipation all at the same time.
I find it so weird that even though our move back to Canada is around the corner I've somehow been feeling super homesick. Maybe it's all the anticipation of seeing family and close friends again. Maybe it's the stress of planning ANOTHER international move, and this time with a toddler in tow. In any case, it's during these times I yearn for my mom's amazing Croatian home cooked meals to give me a dose of home & comfort.
With summer days quickly dwindling and work about to begin in full tilt (sniff, sniff!), our days & schedules are quickly getting filled, which means time management must be a PRIORITY. But let me be clear: this means that we must make time for our priorities, the things which are most important to us. Healthy, home-cooked meals are a big priority to us, BUT sometimes we just don't have uber amounts of time to prepare a lengthy or complicated meal. That's where sheet pan meals come to the rescue!
In our household chicken is a staple item we eat to get quality protein and a full & happy belly. But as much as I love our tried & tested go-to recipes, it definitely gets boring when you do the same-old same-old. Especially if you're trying to lose body fat or stay lean, the recipes often call for a pretty plain bird. SO, since I'm not one to shy away from jazzing things up, that's exactly what I did this week with this classic recipe.
